There are those treats, you know the ones I am talking about, that are fast, and easy, and oh-so-rewarding. They make us run in the kitchen for a late night snack, or even a late afternoon snack ;). If you like little square cheese crackers, or little fish-shaped crackers you will really, really like these. I made them for my son's sixth birthday part, a DIY Mario party seen here. They were a hit, but of course you don't need to have a party to have these crackers.
All you need are very few ingredients, about half and hour and you have a delicious homemade snack. I haven't made these in the shape of goldfish, yet (still need to find a very small fish cookie cutter) but they are perfect in any shape or size.
Cheesy Stars
1 1/2 cups cheddar cheese, grated
1 1/2 Tablespoons soft butter
1/3 cup flour
1/4 teaspoon baking powder
Preheat the oven to 400 F. Put all the ingredients in the food processor and blend for about a minute, until the ingredients come together. Shape into a disc, wrap in plastic wrap and refrigerate for about 15 minutes.
Roll out the dough on a floured surface. Using a star-shaped cookie cutter, cut out the stars or any other shape that you choose. Gather the scraps and re-roll the dough, cutting out more shapes. Use a sharp, non-serrated knife to put 1/4-inch slits for the eyes (if you want). Sprinkle with 1/4 teaspoon salt. Bake for 10-12 minutes.
