I was cleaning up the kids bedroom, which in itself is an oxymoron, because while it does, in fact, contain a bed, only one of the boys sleep in there. The other two have decided its much more comfortable to sleep on Mom and Dad's floor, where they can join us in bed at any random time. Fun.
So, back to cleaning. I watched Restaurant Impossible last night with my husband, who has decided that he doesn't mind watching that, since it's kind of like a remodeling show, not really a cooking show. Anyway, I was watching Robert Irvine. That man is fixing restaurants, putting peoples lives back together, renewing marriages, and inspiring 50-something women all over America to pick up the phone and call for someone to 'rescue' their
restaurant. Someone with giant biceps and an accent I can't quite place. Is it English? Scottish? Scott-lish? I decided right then and there, mid-organization, that Mr. Irvine should come and coach my kids into cleaning their room. Or maybe my husband should just use the accent on them. Either way. I can just picture him (Mr. Irvine), using a crowbar on the rug in the boys bedroom, lifting away, revealing the horrifying truth-"Look at this mess!" (Imagine the accent) "Poopy underwear?!? Are you hiding these from your Mom?"
"And what about this toilet! Did you spit food in here you didn't want to eat? I'm ashamed of this place!" His eyes bulging out of his head, that way that they do. I think he should start a new series, Bedroom Impossible and I can be his first client.
In the food department, I have this great recipe to share. I discovered this quite a while ago, and we have been quietly enjoying it by ourselves. I decided it was time to share. This sauce is perfect for grilling, sauteing, oven-roasting, or indoor grilling. All you have to do is throw this sauce in the oven, let it roast a little while, and top your pork chops. Control the heat in this dish by adding jalapenos, or reducing the amount. We prefer ours a little spicy, so I have reduced the jalapenos.
Pork Chops with Spicy Tomatillo Salsa
1/2 pound tomatillos, husks removed and washed
5 cloves garlic
1 jalapeno
3 Tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
4 pork chops, thick-cut and bone in
salt and pepper
Preheat the oven to 350. Core the tomatillos and cut into quarters. Cut the jalapeno into quarters. Place the jalapeno, tomatillo, and garlic into a baking dish (like a 9x13). Drizzle with olive oil and season with 1 teaspoon salt and 1/2 teaspoon pepper. Roast until the tomatillos are soft, 45 minutes to 1 hour.
When the tomatillos come out, cook your pork chops. If you have a grill pan, use that, or an outdoor grill is also delicious. Cook for 8-10 minutes, turning once. While they are resting, put the tomatillo mixture into the food processor or blender and blend until smooth. Season with more salt and pepper to taste, and top your pork chops.
